The old town of Castelnuovo and in particular the porch door, will turn to a three-day meeting of shepherds, farmers, cattle brokers, traders cheese, restaurateurs, castelnuovesi always curious to see the "Fair Cheese" and tourists present in Garfagnana. Everyone can immerse themselves in an ancient atmosphere, simple and true, typical of Garfagnana where gastronomy and in particular tastings of cheese are filled.
8.00 registration forms in the contest, a commission of experts ONAF (National Organization of Cheese Tasters) after a long series of tasting and sensory evaluations of forms (strictly anonymous and pre-numbered on enrollment) rewards the best forms of sheep, cow, goat and mixed in the two recognized categories: producers and dairies. In the afternoon all forms awarded are put in free tasting under the porch door.
